How to make it

  1. Deep-fry eggplant and potatoes separately. Drain and set aside.
  2. Heat oil and sauté garlic. Add bell pepper and stir-fry.
  3. Add fried eggplant and potatoes, stir in the cornstarch mix, and continue to cook until sauce is thickened.
