Nigiri Sushi with Salmon

Kid's Favorite

Salmon 600 g / 克 [fillet, cut into 30 thin slice]
Sushi rice 2 cup / 杯 [washed, soaked and drained]
Water 500 ml / 毫升
Water 1/4 cup / 杯
Sushi Vinegar 3/4 cup / 杯
Crab Roe [for garnish]
XO Sauce 30 heaped tsp


White Vinegar 4 tbsp / 湯匙
Sugar 4 tbsp / 湯匙
Salt 1/2 tsp / 茶匙

  1. Add water and cook sushi rice.  Heat through seasoning mix and stir into hot cooked sushi rice.
  2. Divide cooked rice into 5 portions.  Roll each portion into a long roll.  Divide each roll into another 6 portions.
  3. Mix water with sushi vinegar.  Wet hands with 1/4 cup water and 3/4 cup sushi vinegar. Take one portion of rice and press hard to form rice dumpling.  Wrap with salmon slice and top with 1 heaped tsp Lee Kum Kee XO Sauce.  Garnish with crab roe.  Repeat the step to make salmon sushi.

    Note: Can use sushi moulds to make sushi of different shapes.
    Remark: Sugar and salt can be replaced by 4 tbsp sushi vinegar.
